Azuki beans are a cherished legume within the bean family, with a rich history in Japanese and Chinese culinary traditions. Known for their versatility, they are often transformed into a sweet paste for traditional desserts. To prepare, begin by soaking the azuki beans for 12 hours, followed by draining. Simmer 1 part beans in 3 parts boiling salted water for approximately 45 minutes. Azuki beans are adaptable and can be featured as a complement to hot dishes such as meats, fish, rice, and vegetables. They can be puréed or incorporated into salads as well. In Asian cuisines, these beans are a fundamental ingredient in dessert creations. For optimal preservation, store them in a cool, dry, and shaded environment.
