Azuki beans are a cherished legume within the bean family, with a rich history in Japanese and Chinese culinary traditions. Known for their versatility, they are often transformed into a sweet paste for traditional desserts. The cultivation of azuki beans has now expanded to markets in the United States and Europe, including Italy.

To prepare, begin by soaking the azuki beans for 12 hours, followed by draining. Simmer 1 part beans in 3 parts boiling salted water for approximately 45 minutes. Azuki beans are adaptable and can be featured as a complement to hot dishes such as meats, fish, rice, and vegetables. They can be puréed or incorporated into salads as well. In Asian cuisines, these beans are a fundamental ingredient in dessert creations. For optimal preservation, store them in a cool, dry, and shaded environment.
