This recipe is inspired by our colleague Phuong, who is originally from Vietnam and — fun fact — is actually our accountant. But beyond being great with numbers, she’s a true goddess in the kitchen. She has that rare talent of turning the simplest ingredients into something absolutely heavenly, and this dish is a perfect example of her effortless, fresh, and flavourful cooking style.
A light yet satisfying meal — perfect for warmer days — packed with crisp vegetables, bright citrus notes, and a good source of plant-based protein from soba noodles.
Ingredients (serves 3)
- 250 g King Soba Organic Buckwheat & Sweet Potato Noodles
- ½ cabbage (approx. 300 g)
- 2 carrots (approx. 150 g)
- 3 eggs
- 1 lemon
- 2 tbsp soy sauce
- 2 tbsp olive oil
- ⅓ tsp black pepper
- 1 tsp salt (for the vegetables)
Instructions
STEP 1. Cook the noodles
Cook the soba noodles according to the package instructions. Add a little oil to the water to help keep them from sticking. Drain and rinse under cold water.
STEP 2. Prepare the eggs
Boil the eggs for 10 minutes until hard-boiled.
Tip: Add a little salt and vinegar to the water to make peeling easier.
STEP 3. Prepare the vegetables
Finely cut the cabbage into very thin strips — thinner is better — and grate the carrots on a fine grater.
STEP 4. Season and soften the vegetables
Add 1 tsp salt and the juice of half the lemon.
Massage well with your hands to soften the vegetables and release their flavour.
STEP 5. Make the dressing
In a small bowl, mix:
- soy sauce
- olive oil
- juice from the remaining half lemon
- black pepper
STEP 6. Assemble the dish
Combine the noodles with the vegetables. Pour over the dressing and mix well (chopsticks work great here). Slice the eggs and arrange them on top.
